We fiercely love teatime. There is always something made fresh to go with a hot drink. It is our time to indulge a little, slow down and catch up on all the news. I may occasionally bake a cake or cookie but often it is something healthy and filling to sustain us through the hectic lineup of after-school activities. This popular snack from Northern India fits the bill. It is naturally vegan, gluten-free and a hot favourite.
To serve 4
1 cup dry-roasted, unsalted peanuts (roasted chickpeas or edamame stand-in beautifully)
1/2 cup chopped onion
1 green chili, deseeded and chopped fine
A small handful fresh cilantro leaves, chopped
1/2 lemon, juiced
Sea salt to taste
Mix everything together and serve immediately. Best eaten fresh as peanuts get soggy from sitting in lemon juice.
