Seems to me that almost every dish containing plantains is either fried and/or sickeningly sweetened, taking away what is good and nutritious about this wonderful fruit. Where I come from, green plantains are traditionally cut into chunks, steamed and stir-fried into a dry curry or added to lentil stews. Delicious! My recipe is nothing short of inspired and demands very few ingredients. I recommend pan frying over baking since plantain tends to get rather dry. It also means that you won't need any binders to hold the patties together.
It is all very simple really. Cook 2-3 small potatoes and a whole plantain in water until soft. Drain and peel. Throw in chopped onion, ginger, cilantro, a dash of cayenne, salt and pepper. Mash together. Form into 6 patties and pan fry. Serve with tzatziki, salsa or chutney.
